Chicken New Mexico

Ingredients
- 12 ounces boned and skinless chicken breast , cut into 1 inch pieces
- 3 cups hot cooked brown rice
- 1/2 cup orange juice
- 1 - 8 ounce can tomato sauce
- 1/2 cup finely chopped onion
- 1/4 cup snipped parsley
- 2 tbsp. raisins
- 2 tbsp. chopped pimento
- 1/2 tsp. dried oregano, crushed
- 1/2 tsp. chili powder
- 1 clove garlic, minced
- 1tbsp. water
- 2 tsp. cornstarch
- Hot pepper sauce to taste
Directions
- Combine the tomato sauce, orange juice, raisins, oregano, pimento, onions, chili powder, garlic & hot pepper sauce in a large skillet. Bring to a boil, then reduce heat, cover and simmer for 5 min..
- Stir in chicken & return to boiling. Cover & simmer for another 12 to 15 minutes or until the chicken is tender & no longer pink.
- While the chicken simmers, combine cornstarch with water. Stir into skillet. Cook & stir until thickened & bubbly. Cook & stir for 2 more minutes.
- Toss rice with parsley.
- Serve chicken over rice and enjoy!
